Potato Topped Chicken

Potato Topped Chicken Recipe

Serves/Makes: 4 | Difficulty Level: 2 | Ready In: 30-60 minutes
1 whole chicken, cut up
1/2 cup mayonnaise or salad dressing
1 1/2 cup dry mashed potato flakes
Coat chicken with mayonnaise or salad dressing. Sprinkle potato flakes on wax paper. Roll pieces in potato flakes to coat well. Arrange chicken pieces in single layer on large cookie sheet.
Bake at 400 degrees F for 40 minutes or until golden. Serve hot or at room temperature.
